Menu Day 1
Lunch Menu
— Plantain and mango ceviche with corn chips
— Heart of palm salad with balsamic Vinaigrette
— Ginger marinated beef on sugar cane skewers and
cucumber salad with coconut milk and soy sauce
— Jazmín rice
— Watermelon and mango sorbet
Dinner Menu
— Pumpkin soup with garlic croutons
— Caprese salad (Tomato and cheese salad with basil)
— Sautéed Sea Bass with virgin sauce sided with zucchini and mashed potatoes
— Apple tart with ice cream
Menu Day 2
Lunch Menu
— Gazpacho (Chilled tomato soup)
— Guacamole and tortilla
— Pork loin and beef tenderloin fajitas with bell peppers and red onions sided with pico de gallo, green spicy sauce and sour cream

— Fresh fruit cocktail with passion fruit sorbet

Harry Villagrán Hernández

Harry was born in the southern Pacific town of Golfito, a long ways away from Tortuguero.
Harry's mother was working in Connecticut supplementing their income and Harry was raised by his Grandparents.
Childhood memories are of working hard but enjoying every moment of it while helping his grandfather on the family coffee farm. Harry recalls doing every conceivable job on the farm. Chopping with a machete, picking coffee, hauling the 16 kilos boxes of coffee, called “cajuelas” in Spanish, on horseback from the field to the location where the truck came to pick up the coffee.
It was rare that he didn't have to work, but when he did have a day off, he and his cousins would grab the horses and ride to a waterfall on the farm for a day of rough housing in the water. They always took a fishing line and caught Machaca and Cat Fish.
He got involved working in the food and beverage industry by coincidence, helping a friend. He's cooked, tended bar and coordinated many events. The riverside lunches and dinners that you experience at Tortuga Lodge are in large part, Harry's creation.
In his free time in San Jose, Harry likes to spend time with his wife Raquel and his daughters Valeria and Lia. He still likes to fish as well, but mostly he tries to tire out Lia at the playground and spend quality time with Valeria.
